Sweet Potato Toast with Jerk Seasoning

Sweet Potato Toasts with Jerk Seasoning

Yields: 2 toasts

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes

Flavor Profile: Savory, creamy, with a hint of sweetness

Ingredients:

1 medium sweet potato

Toppings: 1/2 avocado, 1-2 tablespoons hummus, almond butter, or any topping of choice. You can also add pickles, roasted sweet bell peppers, and walnuts.

Instructions:

Slice the sweet potato into 1/2-inch or 1-inch thick slices.

Toast in a toaster, oven, or on a griddle until tender, about 10 minutes.

Decide on your choice of toppings such as mashed avocado, hummus, or almond butter. For this recipe, I added avocado to one slice and hummus to the other.

To add a little crunch, top the hummus side with toasted walnuts and slices of roasted red bell pepper. For the avocado-topped slice add pickle and roasted bell pepper.

Sprinkle your favorite spice blend. I like to use our salt-free jerk seasoning or oxtail seasoning. Click the link to purchase.
