Honey Glazed Jerk Salmon
Jamaica is known for its bold, warm, and spicy jerk seasoning. Fish is also an essential part of the Jamaican diet. While I have eaten many kinds of fish in my lifetime, it wasn’t until my move to the United States in the 1990s that I first had salmon. After the first bite, I knew I had to add salmon to my list of favorite seafood dishes.

What Makes Salmon Good?
Salmon has become a popular dish, especially in the United States.
Part of salmon's popularity is due to its taste. The natural fats in salmon give it a buttery flavor which makes salmon comforting. But unlike many comfort foods, salmon is lauded for its health benefits.
Salmon is high in omega-3 fatty acids which is good for heart health and vision. Omega-3 fatty acids are also beneficial for brain development in children.
To give salmon a bit of island flavor, I season it with a simple and easy honey glaze jerk marinade.
Recipe
Ingredients
1½ pounds salmon filets, about 4 (5- or 6-oz portions)
1 tablespoon honey
1 tablespoon olive oil
1 lemon, juiced (3 tablespoons)
1 tablespoon coconut amino or low-sodium soy sauce
1 tablespoon Food at the Center (salt-free) dry jerk seasoning rub
2 cloves garlic, minced (1 tablespoon)
INSTRUCTIONS
Preheat the oven to 350 degrees Fahrenheit.
In a small bowl, combine the olive oil, jerk seasoning, lemon juice, honey, garlic, and coconut amino and set aside. I recommend that you taste the spice mixture and adjust the salt and pepper content to your preference before pouring it over the salmon.
Place the salmon pieces in an oven-safe dish. Pour the spice mixture over the salmon, making sure that the mixture coats the entire fish pieces. If possible, allow the fish to marinate for 5 minutes before baking.
Bake for 10-15 minutes or until cooked. Serve warm.
